Alexis Ayala is one of the most influential Mexican chefs of his generation. His culinary projects include Tacos Los Alexis and Pargot, both extraordinary places that have captivated diners with exquisite dishes and dynamic menus.
Both Tacos Los Alexis and Pargot were recognized by the MICHELIN Guide Mexico 2024 as among the best restaurants in the Bib Gourmand category, highlighting exceptional value for quality.
In 2023, Alexis Ayala was one of the guest chefs at Sobremesa Mexicana, an exclusive event held in the Hamptons, renowned for offering a sensory feast and an unforgettable culinary journey showcasing Mexican gastronomic heritage.
This year was pivotal for his career, marked by prestigious awards. Food & Wine magazine named him "Best New Chef 2023", highlighting his exceptional talent for creating innovative gastronomic experiences. Similarly, Gentleman magazine honored him as "Best Young Chef of the Year 2023", emphasizing his impact and contributions to haute cuisine.
In addition to these awards, Ayala was presented with the "Young Talent Award 2023" by Millesime, solidifying his position in the industry for his unique and creative approach.
Pargot was featured in Marco Beteta’s prestigious list of the "100 Best Restaurants in Mexico City" and also in Culinaria Mexicana’s selection of the "250 Best Restaurants in Mexico".
His participation in the series "In Search of Mexico" alongside Eva Longoria, showcasing the acclaimed Tacos Los Alexis, has further established him as a culinary reference in Mexico.
His Story: At the age of 17, Alexis first experienced the hospitality industry and was deeply impacted. He began by washing dishes and later became a waiter. This early experience helped him discover his true calling, prompting him to study gastronomy.
He graduated from the Colegio Superior de Gastronomía in Mexico, where his dedication made his dream of becoming a chef come true.
He has worked at renowned restaurants such as Disfrutar in Barcelona, holder of two MICHELIN stars. In Mexico, he has been part of the teams at Pujol, Daruma, and Mia Domenicca, among others. Each experience has enriched his culinary approach.
During his time in Spain, Alexis expanded his skills, knowledge, and refined his techniques. Upon returning to Mexico, he offered private dinners, but his passion for opening his own restaurant led him to launch a taco business, one of his favorite dishes, thus Tacos Los Alexis was born, quickly becoming a success in urban gastronomy.
In 2021, he opened Pargot, initially offering seafood dishes. The restaurant evolved into an establishment celebrated for extraordinary dishes highlighting Mexican gastronomy with Mediterranean touches, featuring a dynamic menu that continually changes to offer diners more options. It is located at Chiapas 46, Roma Norte, Mexico City.
