Chef Thalia Barrios

Thalia Barrios is a distinguished Oaxacan chef from San Mateo Yucutindoó, in the Sierra Sur region of Oaxaca. Her passion for cooking began in childhood, inspired by her mother and grandmother, who instilled in her the value of culinary traditions and a deep respect for fire as an essential element of cooking.

A graduate in Gastronomy from the Technological University of the Central Valleys of Oaxaca, she founded Levadura de Olla in 2020, a project dedicated to preserving and promoting the rich culinary heritage of Oaxaca’s communities through native ingredients and ancestral techniques. She later created Cocina de Humo, an experience that brings diners closer to the essence of traditional mountain cuisine.

Thalia Barrios’ culinary vision is distinguished by telling stories through every dish, honoring family memories, the flavors of her homeland, and the connection between tradition and contemporary cuisine.
